This is how
cocktails containing
ingredients that are
difficult to combine — such as
eggs,
milk, liqueurs,
and syrups — are prepared.
Fill the
cocktail shaker up to two-thirds full with ice cubes and swirl them
round briefly.
Put the
shaker
or glass liner in the refrigerator to chill.
Strain
any water from the melting ice cubes out of the
shaker.
Measure out the
ingredients
according to the recipe, add them to the
shaker,
and close it tightly.
Shake the
shaker
firmly for a few seconds, moving it in and out from the body. Drinks that
are easy to mix should be
shaken for about 10 seconds. While drinks using egg yolk need about 20
seconds.
A perfectly
shakencocktail looks cloudy
at first, then slowly clears from bottom to top.
Ingredients for no more
than cocktails should
be shaken together in a
Boston shaker (if extra
cocktails are required, use more ice).
Preparing Drinks in a Blender
You usually use an
electric
blender for mixing drinks that contain
cream,
eggs fruit and
ice, as well as for those that are frozen.
First chill a
suitable glass in
the refrigerator. If the drink has an elaborate
garnish, assemble
it first so the drink can be served as soon as it is
blended.
Put 1 scoop of crushed ice or 2
or 3 ice cubes into the
blender
jug.
Measure out the
ingredients
according to the recipe and put them into the
blender
jug. Make sure the
blender
lid is properly closed.
Run the
blender
for about 10 seconds on the first setting, then switch to the second setting
and blend for 10
seconds longer. If the drink is too thick, add some more crushed ice or ice
cubes to the
blender
jug before switching the
blender
to setting 2.
Pour the drink into the
prepared glass,
garnish and serve
immediately.
Preparing Drinks in a Mixing Glass
All drink which are stirred
together with ice cubes, but which are served without ice, are prepared in a
mixing glass.
Chill a
suitable glass. If
the drink has an elaborate
garnish, assemble
it first so the drink can be served as soon as it's mixed.
Put 2 or 3 ice cubes in the
mixing glass and swirl them around a few times.
Strain
the melted ice water out of the mixing glass.
Measure out the
ingredients
according to the recipe and put them in the mixing glass.
Mix everything together working
from bottom to top, with a long-handled
bar spoon.
Strain
the drink immediately through the bar sieve into the chilled
glass and
garnish if desired.
If
cocktails for several
people are being mixed (remember to add more ice), it is better to pour less
into the glasses
initially and then share out the rest equally.
Preparing Drinks in the Glass
Generally, drink whose
ingredients combine
easily are stirred in the
glass in which they will be served.
